Savory falafel waffles (gluten free, vegetarian)


Makes 4, 7” waffles

Ingredients:

  • 1 c cashew milk
  • 1 c Tarazi falafel mix
  • ½ c fine rice flour
  • ¼ c tapioca flour
  • 1 T baking powder
  • 1 stick unsalted butter, melted
  • 2 eggs, separated
  • pinch of salt

Topping Suggestions:

  • fried or poached egg
  • halved cherry tomatoes
  • sliced cucumber
  • dill
  • parsley

Directions

In a medium sized bowl add falafel mix, rice flour, tapioca flour, baking powder and mix well. Make a well in the center of the mixture and add egg yolks, cashew milk, and melted butter. Mix thoroughly and set aside. In a large bowl or in a stand mixer fitted with the whisk attachment, whip the egg whites and salt until soft peaks form. Then, gently fold the egg whites into the falafel mixture. Cook in a waffle maker according to the manufacturer’s instructions. Serve with the suggested toppings.
